DEPRESSION.
According to a
recent study, depression is the
No. 1 reason students drop out
of school. It is a common, but
serious illness that leaves you feeling
despondent, helpless, completely
detached from the world. It can make
everyday tasks—such as working,
studying, sleeping and eating—difficult.

ANXIETY.
Low levels of
stress and anxiety are a part
of most people’s lives, and
experiencing these feelings
does not necessarily mean you have
an anxiety disorder. Anxiety disorders
occur when anxiety interferes with
your daily life, halting your ability to
function, and causing an immense
amount of stress and fear.

SUICIDE.
Feelings of guilt,
hopelessness and despair can
build when students don’t take
steps to cope with stressors.

STUDENTS
According to research by the National
Alliance on Mental Illness, one in four
students have a diagnosable mental
illness; 40 percent do not seek help;
80 percent feel overwhelmed by
their responsibilities; and 50 percent
become so anxious they’ve struggled
in school. While there are a variety
of mental health concerns, these are
the top five issues faced by college
students. If left untreated, they can
become debilitating. If you feel you or
your child may be experiencing these
issues, it’s important to seek help
immediately.
STOCKING A
NITRATE-FREE
KITCHEN

itrates are common
preservatives
that convert to
nitrosamines in the body,
which may potentially cause
cancer. Avoiding nitrates isn’t
hard if you learn which protein
sources are nitrate-free. Here
are my 10 favorites to keep on
hand for meals and snacks:

Hummus
– This
ubiquitous garbanzo bean
snack is delicious as a dip with
veggies and crackers.
h
Canned refried beans
–
This versatile protein is perfect
in burritos and as nachos on
baked chips.
h
Rotisserie chicken
– One night
it’s dinner, the next day it’s chicken salad.
A busy kitchen shouldn’t be without this
protein gem.
h
Nut butters
– Cashew, almond,
hazelnut, peanut—there are many options
in this category to serve on sandwiches,
enjoy with fruit, or add to a smoothie.
h
Fish packets
– Many brands of
packaged tuna and salmon are nitrate-free.
New flavor varieties and portability increase
versatility in lunches to-go.
h
Eggs
– Inexpensive, easy to prepare
and high in protein, eggs are always a good
choice. If you’re busy, stock up on
precooked hard-boiled eggs for
family snacking.
h
Meat substitutes
– Consider
a meat substitute designed to look
and taste like the real thing, but
made with vegetable protein. One
of my favorites is Beyond Meat,
which offers vegan “burgers,”
“meat” strips, and seasoned
ground “meat” crumbles.

Leftover meat
– Get in the
habit of making extra when you
cook meat for the family to use for
sandwiches and salads the rest of
the week.
Surprisingly, nitrates occur
naturally in many foods, including
fruits and vegetables.These naturally-
occurring nitrates are delivered with
vitamins and compounds that prevent
the conversion to potentially toxic
substances. It’s when nitrates are added as
a preservative—as they often are in deli
meats, sausages, and hot dogs—that they
are problematic.
Suicide affects everyone, including a
victim’s friends and family. According
to a report by Emory University, more
than 1,000 suicidal deaths occur on
college campuses in the U.S. every year.

EATING DISORDERS.
Millions
of college students—both women
and men—develop eating
disorders during their college
years. Eating disorders are extreme
behaviors, and emotions and attitudes
that revolve around food and weight
perceptions can cause serious mental and
physical problems that can result in life-
threatening issues when left untreated.

ADDICTION.
Alcohol and drug
use has become commonplace
on many college campuses
throughout the U.S. For some
students, what starts as a social practice
can become a full-fledged addiction.
